Portuguese Caldo Verde

And yasssss!!! It's Caldo Verde, baby!!
One of the most iconic soups in the history of Portuguese soups.

Caldo Verde goes fantastic with bread or/ and super thin slices of grilled chorizo. Although it warms the cold winter nights,  Caldo Verde is also a delicious meal all year round. Throughout Portugal there are several small restaurants where people gather together especially to eat Caldo Verde and Chorizo.

For this recipe you'll need:



10 medium sized potatoes
2 large onions
2 bags of chopped kale
Water
2 table spoons of olive oil
Chorizo
Salt
This is one of the most traditional and delicious portuguese dishes. Although it is a soup, it can be served as a complete meal. It is served in dinner parties, at weddings, or at a family gathering. There is even a special way to chop the cabbage, that has the same name as the dish.

Process:

1) Peal the potatoes and the onions and cut them in cubes, so it takes less time to cook.

Fill your pot with water enough just covers the vegetables. From the moment the water is boiling, count about ten minutes, remove the pot from the heat and blend until it has a creamy look. Add some water if you prefer your soup a little more liquid.

Add salt and two table spoons of olive oil. Stir.

You can buy the kale already chopped or you can chop it yourself. If you chose to chop it, pile up six or seven leaves and cut them in extra thin stripes, about half a centimeter wide. Add the chopped kale, an extra pinch of salt and let it cook for another 10 to 15 minutes.

5)
Cut ten slices of low fat chorizo and stir fry them in a pan, for about 10 minutes.


Serve it in bowl or in in your best china.
