Super simple Lentil Pot Pie with Hibiscus Salad

A pot pie can be a light nutritious meal. 

You'll need: 

For the pot pie:

  • lentils
  • salt 
  • pepper
  • garlic powder
  • turmeric
  • boiled rice
For the hibiscus salad:
  • pointed cabbage
  • onion
  • hibiscus petals
  • mix of sesame seeds and sunflower seeds
  • green pepper
  • salt
  • pepper
  • olive oil
  • rice vinegar

How to make it: 

The lentil pot pie:
  1. boil white rice in water and a pinch of salt for 8 to 10 minutes
  2. drain the rice 
  3. after resting in water to hydrate and expand, boil the lentils in water and a pinch of salt for 5 to 10 minutes
  4. using a masher, a fork or your hands, mash the lentils roughly
  5. season the lentils
  6. grab a bowl or a tray and drop the mix, pressing it lightly.  
  7. Spread the rice on top, covering the whole surface

For the salad:

  1. slice the cabbage and the onion very thinly
  2. drop them in a bowl
  3. add the hibiscus petals and the seeds
  4. season the salad
Et voilá. Perfect summer meal. Enjoy!!!!
