Tiny little pieces of vegan heaven

Miracles and surprises happen when you believe that you deserve the very best.  The night after
writing my new song Butterflies & Rainbows (I leave you the lyrics below and it will make sense) I arrived home with the kids after a concert  - where I had an incredible reunion of love with a very special friend I hadn't seen in years. As I open the driver's  car door, my eyes catch a white rose lying on the sidewalk. Right next to me. At my gate. 

I was in absolute awe of the beauty of that moment. In total awe. 

What does this moment relate to the vegan sliders I created with leftover rice? Absolutely nothing! Bu-ut I'm wishing something like this happens to you too and makes your day. Believe. And it will!

You'll need:

• Leftover cooked rice
• Onion
• Tomato sauce
• Peppers (I used green, red and yellow)
• Oats for guarnish (optional)
• French garlic
• Olive oil
• Pinch of Sal & Pepper

How to make it: 

1. Thinly slice the onion and the french garlic
2. In a pan, sauté the onion in a tiny drizzle of olive oil
3. When the onion is transparent, add tomato sauce and let it cook for about two minutes. 
4. Add the leftover rice and combine everything together
5. Mash the rice or blend it until it forms a rough paste
6. Add the thinly sliced peppers and the french garlic
7. Pinch of salt and a pinch of pepper to rectify the flavors
8. Form samll discs and take them on an oven tray for about 10 minutes or until crrrrrispy.
9. Turn and let the sliders with a spatula and let them cook for another 5 minutes (aprox.)

Can you hear the angels chanting? Yep!
