Portuguese Rice & Peas

You can make anything with olive oil, onions and garlic. And love.

My name is Angela and I am 100% Canadian, born and raised.  

In the past 10 years I have taken on the portuguese culture as if it is my own.  

I have been in a relationship with a portuguese man for that long as he says PIMP (Portuguese Immegrant Making Progress), so he has taught me a lot about portuguese food.  

He says you can make anything with olive oil, onions and garlic. And I add a little love to each dish.    

One of my favorites is simple and very delicious.                                      

I call it rice and peas.     

You'll Need:   

  • pork cut into cubes 
  • chopped onions
  • garlic
  • 1/2 teaspoon of piri piri 
  • 2 tbsp of pimenta   
  • 2 bay leaves 
  • white wine
  • 2 potatoes 
  • fresh or frozen peas
  • water
  • 2 hands of rice

  1. Saute salted meat.
  2. When browned add onions and garlic with meat.
  3. In a large coffe cup mix a half teaspoon of piri piri and 2 tablespoons of pimenta and a couple bay leaves. 
  4. Fill cup with white wine.  
  5. Add to meat. Simmer until tender.  
  6. Peel 2 potatoes and cube. Add to meat ensuring enough liquid.  
  7. Add water if necessary.  
  8. Add 2 or so hands of rice. Simmer until potatoes and rice are tender.  
  9. Add fresh or frozen peas.  
  10. Stir and cover for 3-5 mins.
